PASTA WITH SPINACH

PASTA  WITH  SPINACH:

INGREDIENTS:

500  g wholewheat spaghetti, boiled
            until al dente
3  tbsp  olive oil
100  g  splintered almonds
4  cloves garlic, crushed
500  g  fresh spinach, washed and snipped
Salt and black pepper, to taste
Grated nutmeg, as desired
200  g ricotta cheese, drained

METHOD:
  • Heat oil in a saucepan and fry almonds lightly over a mild heat.
  • Add garlic and stir-fry for another minute. Stir in spinach and stir-fry until spinach is soft.
  • Flavour with nutmeg, salt and pepper.  Add cheese to spinach.
  • Turn pasta into a serving bowl and spoon spinach mixture over. Stir through until mixed and serve.
Note: Delivers four portions.
