PASTA WITH SALMON

PASTA  WITH  SALMON:

INGREDIENTS:

25  g  butter
4  spring onions, finely chopped
150  ml  grape  juice
150  ml  fish or vegetable  stock
Saffron, a large pinch
150  ml  double cream
Salt and coarsely-crushed black pepper, to taste
500  g  pasta, cooked
4  salmon steaks
1  tsp  olive oil
1  tbsp  each, chopped chives and dill

METHOD:
  • To prepare the sauce, heat butter in a pan until melted and cook onion very gently until softened.  Add grape juice, stock and saffron.
  • Bring to a boil and cook until reduced by one-third.  Add cream and simmer for a couple of minutes.  Add herbs and seasoning and remove from the heat.
  • Heat a griddle or a heavy-bottom pan until smoking hot. Brush both sides of  salmon fillets with oil and season generously.
  • Cook on the griddle for a couple of minutes on each side until blackened on the outside and just cooked within.
  • To serve, toss pasta with sauce, pile into bowls and top with salmon. Garnish with chives and dill.
Note: The sauce can be made in advance and reheated when needed.
