CHILLI AND PEPPER PASTA

CHILLI  AND  PEPPER  PASTA:
INGREDIENTS:                  ( serves 4)

2  red bell peppers, halved and seeded
1  small red chilli
2  cloves garlic
4  tomatoes, halved and peeled
50  g skinned almonds,toasted and ground
50  ml  olive oil
575  g  Fussili pasta, cooked
Fresh oregano, to garnish

METHOD:
  • Place bell pepper on a baking tray skin side up along with garlic and chilli.
  • Bake in a broiler for 15 minutes until charred. Turn over and remove. peel bell pepper and garlic and keep aside.
  • Puree tomato, chilli, garlic and pepper well.  Add olive oil to make a thick sauce. Stir in almond powder and heat through. Add pasta, warm and garnish with oregano leaves.
