THAI BEEF PASTA

THAI  BEEF  PASTA:

INGREDIENTS:            ( serves 2 )

60  ml  reduced-fat mayonnaise
30  ml  Thai peanut sauce
115  g  fuselli  pasta, cooked al dente
                   according to package instructions
225  g  deli roast beef, thick sliced, cut into cubes
Salt to taste
Freshly ground pepper
4  cups salad greens
1  red bell pepper, cut into 2-cm pieces( about 1 cup)
1  cup  fresh pineapple cubes
30  g dry roasted peanuts

METHOD:
  • Mix mayonnaise and peanut sauce. Drain pasta well and add to the bowl along with the beef; toss well. Taste and adjust seasoning.
  • Arrange greens on two dinner plates, and spoon over pasta and beef. Top with bell pepper and pineapple cubes, sprinkle with peanuts and serve.
