FUSELLI FRUTTI DE MARE

FUSELLI  FRUTTI  DE  MARE:

INGREDIENTS:                     (serves 2 )

350  g fuselli, cooked al dente
2   leeks, white part cut into rings
50  g mussels
30  g shrimp and calamari each
1   celery stick, diced
1   tomato, diced
1   garlic clove, minced
1  tsp tomato sauce
500  ml  non-alcoholic white wine
50  g basil, minced
Fresh manjoram, a spring, minced
Fresh parsley, minced
Salt and pepper, to taste
Olive oil, for cooking

MEHOD:
  • In a greased saucepan, saute garlic until it turns light brown, then add mussels, shrimp and calamari. Drizzle wine, cover, and simmer for 20 minutes. Let the pot cool, shell the mussels and strain the cooking liquid, being careful to remove all the sand.
  • Saute vegetables in olive oil, then add seafood and broth ( add broth as needed). Simmer well.  Add tomato sauce, garnish with herbs and serve hot.
