SPAGHETTI ALLA CARBONARA

SPAGHETTI  ALLA  CARBONARA:
INGREDIENTS:               (serves 4)

350  g spaghetti, cooked al dente, kept warm
40  ml extra virgin olive oil
40  g pecorino cheese, grated
60  g parmesan cheese, grated
5  eggs, whisked
150  g turkey bacon, cut into 2 cm rectangular slices
Salt and freshly ground black pepper, to taste

METHOD:
  • In a bowl, mix together egg, cheese and black pepper. In a heated pan, add olive oil and shallow-fry turkey bacon until crisp.
  • Reduce heat and add the prepared spaghetti to turkey bacon. Toss well and add egg and cheese mixture and stir quickly.
  • Make sure the egg remains creamy and does not overcook. Arrange in a pasta bowl, season with black pepper and serve immediately.
