PASTA WITH MUSHROOM SAUCE

PASTA  WITH  MUSHROOM  SAUCE:
INGREDIENTS:                   ( serves 4)

90  ml  extra virgin olive oil
450  g mushrooms, sliced
1  finely-chopped red onion
4  cloves garlic, chopped
30  g fresh parsley chopped
12  black or green olives, pitted, halves or chopped
Salt and pepper, to taste
400  ml  fresh cream
Any fresh or dried pasta, ( use 500-600g if it's fresh, or
             400-480g if it's dried pasta)

METHOD:

  • Warm olive oil in a saucepan and gently saute garlic and onion until golden brown.
  • Add parsley and mushrooms, and simmer for six minutes. Add olives and salt, and then the cream. Cover the pan and cook for five minutes.
  • Cook pasta according to packet instructions.  Add it to the pan and toss in with the sauce for a few seconds. Garnish with parsley and serve immediately.
