INGREDIENTS: ( serves 4)
250 g pasta, cooked
For meatballs:
500 g lean beef mince
1 onion, finely chopped
2 large eggs
4 tbsp breadcrumbs
4 tsp chopped parsley
1/2 tsp ground nutmeg
Oil, for frying
For tomato sauce:
1 tbsp oil
1 onion, finely chopped
425 g canned tomatoes, peeled
1 small tin tomato paste
METHOD:
- To make meatballs, mix together all the ingredients, except oil. Season to taste and shape into balls.
- Heat little oil in a frying pan and saute meatballs until evenly browned. Remove and keep aside.
- To make sauce, heat oil in a saucepan. Add onion and saute until soft. Add the remaining ingredients and stir well.
- Bring to the boil, stirring constantly. Add meatballs and bring to a boil. Reduce the heat and simmer, uncovered, for an hour. Serve on top of pasta.
