FRESH PASTA

FRESH  PASTA:
INGREDIENTS:            ( serves 4)

700  g flour
5  eggs ( medium free-range)
5  litres water
10  g rock salt
2  tsp  olive oil
Readymade Bolognese sauce or any
      other dressing of choice, to serve

Preparing the pasta dough:
Pour flour directly onto a flat wooden surface. Add the 5 eggs,and using a blunt knife gradually mix the flour into the eggs to create a dough-like consistency. Then begin kneading it with your hands. The dough is ready when it springs back on pressing. Now dust flour on the dough and wrap in cling film and leave to rest for about 20 minutes.

METHOD:

  • Place dough on a floured work surface and begin flattening it with your hand. Then use a heavy rolling pin, dusting with flour, as needed.
  • Flatten until the dough becomes thin, about 1mm thick. Fold two sides of the pasta until they meet in the middle.
  • You can make any shaped pasta from this dough by cutting it into strips.  To cook fresh pasta, boil water in a large pan, add rock salt and stir well.
  • To see if it's ready taste a strand. Strain pasta through a colander and tip into a bowl. Drizzle olive oil over and mix well.
  • Spoon readymade Bolognese or any other sauce over the pasta. Toss well and serve immediately.
